Nestled in the heart of Valle del Cauca, along the banks of the Cauca River and flanked by two majestic Andean mountain ranges, Hacienda Mallorca benefits from an exceptional microclimate that is ideal for coffee cultivation. The region’s warm days and cooler nights create the perfect conditions for the slow maturation of coffee cherries, allowing for optimal sugar concentration and enhancing the complexity of the beans’ flavors.
Hacienda Mallorca has gained recognition for its specialization in micro-lot production, focusing not only on innovative processing methods but also on cultivating a diverse range of coffee varieties. Over the years, the farm has carefully expanded its selection of coffee trees, prioritizing quality and flavor diversity. Today, Caturra makes up 85% of their coffee trees, while Geisha (9%), Yellow Bourbon (4%), and Orange Bourbon (2%) contribute to the farm’s rich biodiversity. In a recent expansion effort, the farm also planted 12,000 Pink Bourbon trees, reinforcing its dedication to experimentation and the pursuit of excellence in coffee production.
With a strong emphasis on sustainability and precision farming, Hacienda Mallorca continues to refine its practices, ensuring that each harvest meets the highest standards of quality.
