Ana Sora is a standout coffee originating from the famed Guji region near Yirgalem in Ethiopia, a country often regarded as the birthplace of coffee. This coffee is named after the Ana Sora farm, a unique high-altitude location that plays a key role in shaping the coffee’s exceptional characteristics. Situated at an impressive 2,350 meters above sea level, Ana Sora benefits from cool temperatures and slow cherry maturation, which are ideal for developing complex flavors and vibrant acidity.
Israel Degfa, a respected name in Ethiopian specialty coffee production, manages the farm. With a deep commitment to quality, Israel built a dedicated washing station and raised drying beds at this remote, high-altitude site. This focus on post-harvest excellence ensures that each batch of Ana Sora is processed with precision and care, preserving the delicate flavors inherent to the region’s unique terroir.
Ana Sora employs the natural processing method, where whole, ripe cherries are dried in the sun on traditional African raised beds. This process typically lasts for 30 days or more, depending on the weather. The extended drying time intensifies the coffee’s sweetness and allows its fruit-forward characteristics to shine through. The result is a cup that is bursting with juicy, berry-like aromas, a smooth and creamy texture, and a flavor profile that’s as vibrant as it is balanced.
The varietals grown at Ana Sora include 11/714 and 74120, hybrids of local landrace types along with some indigenous Ethiopian varietals. These cultivars are known for their complexity and their ability to express floral and citrus notes when grown at high altitudes.
